I logged in, can't close the character panel, once I relogged to see if anything changes I was falling out from the map, died, got even more stuck. Anyway to get some steps to even join in? Because starting the server to play co-op is simply bad. even though the server is running, it connects and disconnects all the time.

From what you described, it sounds like you joined an existing player-hosted server rather than starting your own.
If that's the case, you'll need to contact the administrator of that server. Any issues related to the server's scripts, character panel, spawning, or connection behavior are the responsibility of the server administrator, as those scripts are managed by them and not by us.
I see, then if that's the case, then how is that possible I can't manage to anyone connect to the one I host? The server is running, but when it comes to connecting I got only:

then it only repeats itself for like 900 entries until running the server and the game is unmanagable for the PC

You need to make sure that all ports specified in the server config are properly opened and forwarded, even if the server is hosted on a machine in your local network.
The server also needs to be reachable through an external/public IP address. This is required due to several aspects of the platform’s architecture, networking model, and security mechanisms.
If any of the required ports are blocked, not forwarded correctly, or the server is not accessible through a public IP, connection attempts may remain in `CONNECTPENDING` and then disconnect repeatedly.
Great, got it done, but there are no npcs, mobs, nor items except for the torches. Is that how it supposed to be? If so how can we redone it and set spawns or anything?
Everyone writes/configures their own script however they want, including NPCs, mobs, items, spawns, etc. Questions like this are at the very least quite strange, especially when the Wiki already contains all the necessary information on how to set these things up.
Please make sure to read the Wiki before creating a topic in the future. Threads with questions that are already clearly covered there may be closed.
